Just like other styles Texas has different areas of the state each having their own unique BBQ flavor. Texas BBQ focuses on beef. Depending upon where you are there might be a little chicken or pork ribs, but primarily beef. We’re talking beef brisket, and beef ribs Y’all! It’s the smoke and the heat, not the flame that cooks the meat. Low and slow over coals and/or wood is the method used here. Sauces tend to be thin and bold; more like a basting or mop sauce. Dry rubs are used in generous amounts. Our Texas Dry Rub is bold in flavor from the various kinds of ground chili’s, and savory with a bite of heat. Traditional Uses:
Mesquite and Hickory are the choice for a bold beef flavor. Try Oak and Pecan on pork products, or mix with Cherry, Apple or Alder wood for a sweeter flavor.
